mango salsa

this salsa is my new absolutely favorite way to boost my daily fruit & vegetable quota. am getting bolder by the week with produce picks. when i slice these ripe babies up, i feel like i'm playing a game of twister with the cast of grease; sweet mango is sandra dee to my john travolta red pepper. little miss lime divine is definitely rizzo. get out the chopping block, this reunion is cause for serious celebration. they go together.





marta's mango salsa

1 ripe mango, peeled, pitted & cubed
1/2 red pepper, diced
1 peach, diced
1 roma tomato, diced
1 small cucumber, peeled & diced
1/2 medium red onion, finely chopped
1 jalapeƱo chile, minced (optional)
1 ripe avocado, diced (optional)
4 Tbs fresh cilantro leaves, chopped
juice of one or two limes

combine the fresh ingredients in a bowl.
season with salt & pepper.
serve with tortilla chips
& any Mexican cuisine.
enjoy.

  3. mm.. summer lovin'. this has all of us kitchen girls swooning. we've really gotten into mangoes this summer, so this looks like the next new dish to try out. way to brave the produce aisle! (i need to work on that.) thank you so much miss bold and beautiful.

    She uses just mango, cilantro, green onions, lime and MINT . Her suggestion is to serve it over roasted red snapper.
