simple popeye spinach quiche

a few of you asked for the quiche recipe i served on saturday. am more than happy to concede. especially since i documented it pioneer woman style. (plus, my big brother even wants the recipe, so anna, i hope you're paying attention. i know you're the cook of the house!) here goes, a super simple spinach quiche.

the super simple part is buying all of the ingredients at the supermarket. you don't even have to make the crust or grate the cheese if you don't want to. like i said, keep it simple.


after thawing the frozen chopped spinach, which i allow to sit in the fridge for a few days prior (nothing makes you more blue than building a spinach quiche with a frozen brick of green) begin your pop-eye project. drain the spinach in a colander and then let it chill on paper towels. beat the eggs and add the other ingredients. keep your scissors handy, you'll be opening a lot of packaged goods. blend together and watch your little green swamp whirl around. meanwhile take sips of vitamin water. cookin' is a serious job.

place your unbaked pie shell on a baking sheet and throw your cheesy spinach swamp of goodness into the well. keep in mind i doubled this batch, the recipe makes one quiche pie.


you have the option of refrigerating it overnight before baking your creation. which makes it nice; you can pop it into the oven while you get ready for the big event. and then your house smells good and this simple spinach quiche looks all homemade and wonderful. {you will have cleaned your house and taken out the garbage, removing all traces of 'pre-packaged goods' by morning.}

bake the quiche an hour before guests arrive and let it sit on the table to cool just a tad before serving. your oven will be hot and ready for quick cinnamon buns to bake, which also originated at the frozen foods section. but no one needs to know that either.

SIMPLY SPINACH QUICHE

10 oz. pkg. Frozen Spinach (let thaw in fridge for a day)
5 Eggs, beaten well
8 oz. carton small curd Cottage Cheese
2 cups grated combination Cheddar and Monterey Jack Cheeses
1/8 cup dried or chopped Onion
1/8 tsp. Salt
1/8 tsp. freshly ground Black Pepper
9 inch deep dish unbaked pie shell (in the frozen foods aisle)

Preheat oven to 375°. Drain thawed spinach in colander, pressing with paper towels to remove all liquid. In large bowl of mixer, combine eggs, cottage cheese, spinach, 2 cups grated cheese, onion, salt, and pepper. Beat to blend and pour into unbaked pie shell. (At this point, quiche can be refrigerated overnight.) Bake 50-60 minutes. Let sit 5-10 minutes before cutting. Cut into wedges and serve warm.
Yield: 6-8 servings.

thanks. i have cottage cheese i need you use up and i have spinach and crust in the freezer. yea for dinner! i'll just need to defrost my spinach more quickly. i hope it works in the microwave.

I did make this tonight Marta! I am not a cook and so I get a little nervous about a new recipe, but this was so simple and it was amazingly tasty! You should write a cookbook! (I always like the recipes you choose. The crockpot ones look pretty simple and yummy too. So, I'm going to buy a crock pot and try those.) My daughter asked for seconds (I don't think that has ever happened before.) My mom & sister then came over and they finished it off. I was so pleased I had something nice to feed them. Hooray! You made my day!
