applesauce and oats

some days i want to go back in time and wear aprons in the kitchen with my sisters. we had this paisley prairie apron with a ruffly hem. in my young mind this piece was better than any gucci gown. many a square dances were done in my living room wearing that apron. it smelled like pinesol because we hung the aprons in the cleaning closet. i begged for that apron every time. we fought for it, and being the youngest, i usually ended up with the snoopy apron that said kiss the cook on the chest. which was far inferior to the frills of the beloved prairie apron. now that i am all grown up i have a whole rack of aprons to choose from, which is not as fun as fighting over them.

i love this batch of muffins. my sister-in-law, amy gave me the awesome recipe. it only has 1 cup of brown sugar, so i feel they are wholesome pure nutritious fiber. just like the pioneers used to make. if the pioneers had coconut flakes. which i entirely doubt. still, i think of them as my healthy li'l handfuls of heaven. that is, until i eat half the batch. this recipe makes a perfect dozen, a delicious dozen that is. hope you enjoy them. and be sure to wear a cute apron while mixing.






AMY'S OATMEAL APPLESAUCE MUFFINS

1 1/2 cup Oatmeal
1 1/4 cup Flour
1/2 cup Brown Sugar
1 tsp. Cinnamon
3/4 tsp. Soda
1/2 tsp. Salt
1 cup Applesauce
1/4 cup Vegetable Oil
2 Egg Whites (or 1 whole Egg)
1 tsp. Vanilla

TOPPING
1/2 cup Brown Sugar
1/4 cup Butter
1/2 cup Coconut
1/2 cup Oatmeal

BATTER: Stir together all dry ingredients. Add applesauce, oil, egg and vanilla. Mix lightly, just until moistened. Fill greased muffin tins 3/4 full. Mix topping ingredients together in small bowl and sprinkle on top of unbaked muffins. Bake at 350 degrees for 15-20 minutes.

Makes a dozen muffins.

oh, oh, oh. muffins are right up there with coffee cake for me. these look magnificent. thank you so very much for sharing! i just ran out of coconut- now i can't wait to buy more. putting it on the grocery list right now.

ps. i can almost smell the pinesol. what a lovely memory!

And I love that your flour is in a 'Red Vines' container. That reminds me of when I was younger and we'd go camping as a family- we always had a giant tub of 'Red Vines', so yummy!

Holy Macaroni, Marta! I just made these tonight.

I have to admit...I was skeptical. (I don't normally believe in baking with applesauce.) These were fabulous, though! Even my husband loved them...and that is saying something.
