enthusiastic chicken tortilla soup
ever since last spring when i re-discovered my soul mate in cilantro, i've been buying it by the bunch every week. i love to make this soup in the crockpot for dinner and warm it up for lunch the following day. it's so fresh and delicsh. and really so simple. the must-have ingredients are chicken, broth, green chiles, cilantro and lime. everything else is just bonus.
enthusiastic chicken tortilla soup
2-3 cans chicken broth
3-4 chicken breasts, cooked & shredded
1 can (7 oz.) diced green chiles
1 clove garlic, diced
1/2 cup salsa
1 cup corn, rinsed & drained
1 cup black beans, rinsed & drained
1/2 a bunch of cilantro, chopped
1 tomato or 1 tomatillo, diced
1 lime, juiced
toppings:
fresh slices of avocado
a dollop of sour cream
grated cheddar cheese
crushed tortilla chips
combine all the soup ingredients together in a large pot or crockpot. stir occasionally. simmer for a half hour or more. ladle soup into bowls and garnish with favorite toppings. enjoy.
*named after my dad's enthusiastic stew–his famed winter dish–everything he loves goes into it.

Yum... I have a recipe very similar to this and it is a family favorite! Nothing beats a good soup.

Can you see in my fridge or something? I have a big bunch of cilantro just waiting for me to do something with. This looks perfect. Will adapt to a vegetarian option. It's even raining here this morning so this looks great!

I love this recipe too, and was quite distressed last week when I discovered I didn't have any limes - but I did have the cilantro & lime Rotel - which works nicely in a pinch! Yum....

sounds so YUM - and fyi, cilantro loves to grow. perhaps you could pot some and grow your own to really make those oh-so-perfect dishes even more special with your very own stock of herbs fresh from the windowsill (wow-that word looks misspelled but not sure how to right it)!
