lemon buddies / a tasty thank you
the scattered bowls of lemon buddies seemed to be a big hit at the family potluck party the other night. we are big fans of the classic muddy buddies, so i was excited to try this lemon-flavored twist. (luckily i saved a jar for a little thank you gift.) they taste like lemon bars, but without any work whatsoever. i whipped them up late the other evening while waiting for dan to come home and getting my BRAVO television fix. one eye on the tv, one eye on the lemony chex mix. they taste like summer. pour them into a pretty bowl and add a sweet little scoop for your next soiree.
Lemon Buddies
adapted from the back of the box of Chex cereal
1 whole box of Rice Chex® cereal
1 bag white vanilla baking chips (approx. 2 cups)
1/2 cup butter or margarine
the zest of 2 lemons
the lemon juice of 3 halves (approx. 3 - 4 Tbs.)
2 - 3 cups powdered sugar
Pour the cereal into a very large bowl, set aside. In 1-quart microwavable bowl, microwave chips, butter, lemon peel and juice uncovered on high 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Pour lemony mixture over cereal, stirring until evenly coated. Pour sticky cereal into a 2-gallon Ziplock plastic bag. Add powdered sugar. Seal bag; gently shake until well coated. Spread on waxed paper or foil to cool, a 9x13 pan works great. Delicious if stored in the fridge! Let lemon buddies dry out a bit or else they will get soggy. Serve to hungry humans. After a day, store in airtight container.

Wow. I think this is a good recipe. My niece and her friends are coming over this weekend. I think this is a good thing to prepare for them.
