mac and yum

last night we had sunday supper over at my sister's house with the fam. really, is there anything better than sitting around the table with your siblings and all their cutie pie kids?! especially when someone else has done the cooking. she had a plethora of delicious fixin's. including this to-die-for macaroni and cheese side dish that even the adults couldn't pass up! amy found the recipe in this adorable cookbook, perfect for anyone who needs a dash of simplicity and homecooked love.

Macaroni + Cheese

4 T. butter
2 T flour
3 cups milk
8 ounces elbow macaroni, uncooked
1 tsp. salt
1.5 cups cheddar cheese, grated

In a large saucepan melt the butter. Add the flour and stir. Cook for about 1 minute until mixture is completely blended and slightly thickened. Add the milk, macaroni, and salt. Stir together and bring just to a boil, being careful not to overcook or the mixture will curdle. Lower the heat, cover and simmer for 15 minutes or until the macaroni is tender, stirring occasionally so macaroni doesn't stick to the bottom of the pan. When macaroni is done, stir in cheese until melted, about 2 minutes. Serves 4.

Mmmm mac & cheese is my ultimate comfort food. I've found that the older and stronger the cheddar, the more flavorful it is.

Thanks for coming last night. It was really a great time with the family. That mac and cheese recipe is so easy and it's always a hit. If you get this book, be sure to make the chocolate pudding, it's a cup of heaven!
