cakes continued.

after reading your favorite cake recipes, i headed out and bought the ingredients for a few of them. (i was keeping my options open. would it be the red velvet, the perfect chocolate, or the tunnel of fudge.. hmm.) i was so excited with the delicious ideas and all the additions to my cookbook. (thank you.)

but of course, i wanted to give dan first choice. (after i'd narrowed the choices down. so i seduced him with words like death by chocolate, silky red velvet, fudgey goodness, and he almost took the bate.) then he asked why i wasn't making his hobbit cake. oh yeah, that cake. the classic bundt cake i make every year. i had conveniently forgot about that cake. what was i thinking? it's moist and delicious. it's tried and true and dan loves it. and with the help of pam with flour, it comes out of the pan beautifully. (but this cake has no fudge swirls or cream cheese frosting or red food coloring!!)

by then the guilt of dreaming up my perfect birthday cake started gnawing at me. so after dan assured me he did indeed want that same ol' cake again. i told him, okay, the hobbit cake it is. i mean he is the birthday boy afterall. lesson learned. let him have his hobbit cake and eat it too. (i'll be saving the red velvet for valentine's.)

Chocolate Chip Coffee Cake
{aka Dan's Hobbit Cake}

1 cup butter
1 cup sugar
2 eggs
1 cup sour cream
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 tsp. vanilla
2 cups sifted flour

Streusel Mix
1/4 cup sugar
1/3 cup brown sugar
2 tsp. cinnamon
1 cups pecans/walnuts (optional)
6 oz. semi-sweet chocolate chips (i like the mini chips)

Preheat oven to 350.

In large bowl, cream butter & sugar together until smooth. Add eggs & sour cream, baking powder, salt, soda & vanilla. Gradually add flour & mix well. Combine streusel ingredients in a small bowl. After greasing a tube pan (otherwise known as an angel food cake pan or a bundt pan works too) well (with Pam spray) add 1/3 of the batter into pan. Then sprinkle 1/4 of streusel mix into it. Alternate layers of cinnamon mixture & batter into the greased pan. Bake 45-60 minutes or until toothpick comes out clean.

Serve warm with a scoop of ice cream or simply a sprinkling of powdered sugar. Treat yourself + your sweetheart.

here are your awesome cake suggestions.

ann..
to answer your question, my hubby lovingly refers to it as a Hobbit Cake because according to the great Tolkien, hobbits have the habit of eating round cakes. mmm.

maybe you can try the red velvet in a bundt pan. :)
my hubby does the same - but his request is even "worse" (in my mind its worse, HE loves it): funfetti cake. from the box. and while the cake is just pathetic, i LOVE that he will never really grow up. :)

My husband likes yellow cake (store bought- box brand) with chocolate frosting. But this year I tried a recipe from The Magnolia Bakery cookbook and I swear by it- The Magnolia Bakery will never disapoint.
