peach cucumber salsa
i admit, this peach salsa recipe doesn't fall far from the tree. you may remember her cousin, mango salsa from the month of june. i suppose these two are bookends to a summer full of fresh fruit. i warn you, after a couple days, the juicy peaches really take over and will undoubtedly dribble down your chin. but the good news is, the salsa becomes the perfect consistency for a marinade for grilled chicken. simply stick your boneless, skinless chicken in a gallon ziplock and pour the salsa remains over it, adding diced onions and garlic if you'd like. let it marinate in the fridge for a few hours. grill chicken for just peachy fajitas.
marta's peach salsa
2 ripe peaches, pitted & cubed
1/2 red pepper, diced
2 roma tomatoes, diced
1 cucumber, diced
1 green chile, minced (optional)
1 ripe avocado, diced (optional)
3 Tbs fresh cilantro leaves, chopped
juice of one or two limes
combine the fresh ingredients in a bowl.
season with salt & pepper. eat.
mmm.

I'm not usually one for fruit salsas (I am sadly a little bit of a weenie about such things) but given my "real food revolution" that I'm trying, this might be a good time to start trying! This looks tasty! I may have to make some tonight and try it with chicken.

Just read that you finished the book Eat Pray Love and thought I would tell you the good news that it's being made into a movie as I type this! Starring Julia Roberts, Javier Bardem, and James Franco. The book was great, and I'm hoping the movie will be, too.
