eat your red n' greens

it has been a real family extravaganza, as of late. bridal showers, weddings, baby showers, etc. have been filling my daytimer. i am a sucker for celebratory events, so all this cousin chit chat has been completely fun. i enjoy getting together with family. with the people you have known your whole life, you can't help but relax and feel true comfort. last saturday, we not only gabbed about the blog world, swaps, but recipes too. as promised, here is my California Chicken Summer Salad recipe.


California Chicken Summer Salad

Tear up two different kinds of lettuce
Slice up & sprinkle salt and pepper on the following:
2 Tomatoes
1 Red Pepper
1 Avocado

2 to 3 boneless/skinless chicken breasts
1 lime, cut in half

Grill chicken, squeezing half of the lime over it. Rotate chicken back and forth to maintain juices within the meat. Once chicken is done, toss all ingredients together in a large serving bowl. Squeeze the second half of the lime over salad. Top with Craisins & Sunflower seeds. Delicious with or without dressing. I especially love that the bowl is filled with different shades of red n' greens. Enjoy!

{This salad can easily be altered for a South of the Border Salad with the addition of black beans, jicama, corn and pork. speaking of pork, my cousin, kelly has perfected her version of the unbeatable Cafe Rio salad.} mmm. mm. hooray for summer and hooray for salads.

I am always up for a good salad recipe!! Lately I've been eating salads everyday.. so it's nice to get some new ideas to change things up.

the husband will be missing out, though! the only thing he will touch on the list of ingredients is chicken...boorrr-ing.

Perfect timing with the salad recipe. Nothing sounds better than some fresh veggies from the farmers market this time of year.
