mint brownies: my all time fave








as a gift to you mint & chocolate lovers, here is the recipe i am famous for. well at least in some states. they are the perfect holiday treat for sharing. and so festive for freezing when you need a break from your new new year's diet. believe me. these brownies will have you singing carols and believing in saint nick all over again. enjoy.
and remember, i don't just give this recipe to anyone. that's how much i love you.

CHOCOLATE MINT LAYER BROWNIES
makes 24 servings

1 1/2 cups (3 sticks) plus 6 TBS. butter, divided
2 cups granulated sugar
2 tsp. vanilla
4 eggs
3/4 cup cocoa
1 cup all-purpose flour
1/2 tsp. baking powder
2 2/3 cups powdered sugar
1 TBS. plus 1 tsp. water
1 tsp. mint extract
4 drops green food color
1 cup semi-sweet chocolate chips.

1. Heat oven to 350 degrees. Grease 9x13 baking pan.

2. Place 1 cup (2 sticks) butter in large microwave-safe bowl; cover. Microwave for two minutes or until melted. Stir in granulated sugar and vanilla. Add eggs; beat well. Add cocoa, flour, and baking powder; beat until well blended. Pour batter into pan.

3. Bake 30-35 minutes. Cool completely in pan on wire rack.

4. Prepare mint cream center by combining powdered sugar, 1/2 cup (1 stick) butter, water, mint extract and food color. Beat until smooth. Spread evenly on brownie. Cover; refrigerate until cold.

5. Prepare chocolate glaze by placing remaining 6 TBS. butter and chocolate chips in small microwave-safe bowl. Microwave 1 minute or until mixture is smooth when stirred. Cool slightly; pour over chilled dessert. Cover; refrigerate at least 1 hour before serving. Cover; refrigerate leftover dessert.

marta,
when my sister came to visit me last weekend THESE BROWNIES were what we decided to make together! They were becoming a fond, distant memory to us, so we brought back our old favorite. They are currently cubed up & freezing for next week's festivities.
I am so happy to see that someone else is delighting in this perfect dessert.

p.s. I made half the pan with a peanut butter layer instead of mint (for Grant) and those turned out great too. Just in case there are any pb lovers at your house.

those look and sound and smell [okay, i imagine i smell them!] so tasty. i'm searching for a way to reconcile the amount of butter in this with my uncontrollable love for chocolate and mint to be all that i eat all day long... if i can find it, i'll be all over this :)

Oh my goodness, bless you. Mint and chocolate are my favorite combo, and I've been needing a great recipe and, hence, excuse to make mint-chocolate brownies!

I have a similar recipe and it is incredibly delicious...you are so right! I haven't made them in awhile and now you have me thinking. What are your thoughts on using Dutch process cocoa instead of Hersheys?

these are my ALL TIME favorites too. my mom made them all my life at christmas. and i make them now too. right now i have very very many left in the freezer that someone will have to eat still in january i guess. it will have to me. I will make that sacrifice. :)
